Dinner
Sheet Pan Salmon with Roasted Vegetables
One pan, one oven, almost no dishes. The potatoes go in first because they need a head start, then everything else joins them. This is a weeknight regular in my house.

Ingredients
- 4 salmon fillets
- 1 lb baby potatoes, halved
- 1 lb broccoli florets
- 3 tablespoons olive oil
- 1 lemon
- 1 teaspoon garlic powder
- Salt and pepper
- Fresh dill, to finish
Steps
- Heat the oven to 400F.
- Toss the potatoes with 1 tablespoon of the olive oil, a pinch of salt and pepper, and spread them on a sheet pan. Roast 10 minutes.
- Push the potatoes to the edges. Add the broccoli and salmon to the pan, drizzle with the rest of the oil and sprinkle with the garlic powder, salt and pepper.
- Roast another 12 to 15 minutes, until the salmon flakes easily with a fork.
- Squeeze the lemon over everything and top with dill.
Kate’s tip. Pat the salmon dry before it goes on the pan. It browns better.
