  • Plusa few hours to chill
  • Serves1

Ingredients

  • 1/4 cup pumpkin puree
  • 1/2 cup cottage cheese
  • 1 large egg
  • 2 tablespoons sweetener of your choice
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Whipped cream, to top

Steps

  1. Heat the oven to 350F and grease a 10 to 12 oz ramekin.
  2. Blend the pumpkin, cottage cheese, egg, sweetener, pumpkin pie spice and vanilla until smooth.
  3. Pour into the ramekin and bake 25 to 30 minutes, until set around the edges with a slight wobble in the middle.
  4. Cool, then chill in the fridge for a few hours.
  5. Top with whipped cream and serve cold.

Kate’s tip. Doubling it? Use two ramekins rather than one larger dish, so it bakes evenly.
