Bread-Free French Toast Muffins

You do not need bread for French toast. These come together in a blender and bake in a muffin tin. The texture is soft and custardy, a little like the real thing. A slow Saturday kind of breakfast.

Ingredients

  • 4 eggs
  • 4 oz cream cheese, softened
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Maple syrup or your favorite topping, to serve

Steps

  1. Heat the oven to 400F and grease 6 cups of a muffin tin, or line them.
  2. Blend the eggs, cream cheese, baking powder, cinnamon and vanilla until smooth.
  3. Pour the batter into the cups, filling each about two-thirds full.
  4. Bake 18 minutes, until puffed and golden. They sink a little as they cool, which is normal.
  5. Top with syrup or fruit and serve warm.

Kate’s tip. Soft cream cheese blends smoothly. Leave it on the counter for 20 minutes first.
