3-Ingredient Cottage Cheese Ice Cream

This is the one I made on camera. Three things in a blender, a loaf pan, and the freezer does the rest. It scoops like real ice cream once it sits out for a bit, and the berries and a little shaved chocolate on top make it feel like a treat.

3-Ingredient Cottage Cheese Ice Cream
  • Prep5 min
  • Plus3 hours to freeze
  • Serves6

Ingredients

  • 3 cups cottage cheese
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Berries and shaved chocolate, for the top (optional)

Steps

  1. Put the cottage cheese, maple syrup and vanilla in a blender and run it for about 30 seconds, until it is completely smooth.
  2. Pour it into a metal loaf pan or a freezer-safe container.
  3. Scatter on any toppings you like now.
  4. Freeze for at least 3 hours, until solid.
  5. Set it on the counter for 20 to 25 minutes, then break it up with a spoon so it scoops easily.
  6. Scoop, add more toppings, and eat it right away.

Kate’s tip. Metal pans freeze faster than glass. Cover it with parchment if it will sit in the freezer for more than a day.
